Zucchini stuffed with quinoa and vegetables

Ingredients:
Zucchini or peppers
Leek
Salt
Mushrooms
Tomato
Quinoa
Herbs

Directions:
Hollow out the zucchini. Cook the quinoa, and while it cooks, cook some paprika with chopped leek, and when the paprika softens add some diced mushrooms and the zucchini part that you hollowed out from the middle.. When it is all cooked, grate one tomato, mix with quinoa and then add some spices to your taste (oregano, thyme...). Fill the hollowed zucchini with this mixture and put then into a casserole, add a little water and bake it in an oven for a while.
