Polenta with arugula

Ingredients: 
2/3 cup polenta
2 dl water
1 handful of pumpkin seeds
1 large handful arugula
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 teaspoon salt

Directions:
Pour water and 1/2 teaspoon of salt in a pot and wait for the water to boil. Reduce the heat and gradually add polenta, stirring if constantly. When the polenta thickens, remove the pan from the stove-top. After that, prepare a dressing made of of olive oil, lemon juice and salt. Season with arugula (rocket) in a separate bowl and then place it on top of polenta, served on a plate. Sprinkle everything with pumpkin seeds.
